Did you know that carrots could play a part in the prevention of Alzheimer's disease and dementia ? Research shows that men who took beta-carotene (one of the main elements in carrots) over a long period showed fewer problems in mnetal health and were able to ward off dementia and Alzheimer's disease.

These studies will have an impact on studying the prevention of mental diseases in the elderly. Studies conducted over several years indicate that betacarotene may play a significant role in reducing the effects of certain illnesses (such as heart disease, decreased immune function, cataracts, and forms of cancer) and, in certain cases, perhaps even prevent them.

Besides carrots, what other foods contain beta-carotene? Mostly highly pigmented fruit and vegetables will contain beta- carotene which is part of the carotenoids family. The most common ones are :- sweet potatoes, squash, spinach, apricots, coriander and green peppers. Another great advantage of beta-carotene is that is converted to retinol which helps to maintain good eyesight.

A word of warning to smokers and heavy drinkers. They should not take beta-carotene supplements. There is evidence that the beta-carotene may actually increase their risk of getting cancer. Research shows that beta- carotene in supplement form increases rates of prostate cancer and lung cancer in smokers.

Another great quality of beta-carotene is that is an antioxidant and therefore protects the cells from the damage caused by the free radicals. It also plays a role in hindering the oxidation of cholesterol which makes it an even more valuable ally. People who take beta-carotene in excess (especially those who are addicted to sun-tanning) will have discoloration on the palms of their ands and soles of the feet.

So here are a few recipes to encourage you to get going. Carrot juice is a great healthy standby but can be used in smoothies for many delicious recipes. As I adore mint, I like this especially. Put 3 carrots, 1 apple, I stick of celery and some fresh mint into the blender and you have a delicious smoothie.

Carrot and lentil soup is another favourite of mine. Ingredients are :- cumin seeds and chili flakes (you can dry fry these to release their aromas first). Then add carrots (already grated), lentils, milk and stock and let it simmer for about 15 minutes. Then, you mix it in the blender until it is as creamy or as chunky as you want. Serve this delicious nutritious soup with a dollop of natural yogurt and coriander.

A healthy balanced diet with multiple nutrients is the best way to stave off illnesses and mental decline. All the better if your diet contains beta-carotene foods such as carrots.
