How To Make Jerky (Overview)

There are many cost saving things that you can do to enjoy food items that are expensive to buy. My husband is a hunter so he likes to take many snacks with him when he goes on various hunting trips throughout the year. I have found that if I make the snacks for him they are higher quality and less expensive. He uses these snacks during travel as well as in the field.

My husband does not like candy bars, however they are a good source of energy while hunting. I started making high energy candy bars for him to take along. He also likes having jerky in his backpack as a source of protein. The jerky can be very expensive. If you buy the cheaper brands there is usually a high fat content. I found that I can make jerky that tastes goods and is very lean. These homemade items take more time to produce, but the quality and reduced cost are worth the effort.

For the candy bars I use the standard crispy rice bar recipe, but instead of using rice cereal I use granola and add in M&M’s and peanut butter. I put them in a pan to cool then individually wrap the cut bars with plastic wrap. When I make jerky I use the lean trimmings from the wild game he shoots. I grind the meat and add spice packets that are available as most meat counters. Sometimes I will make my own combination of spices. It is important to put in enough salt to cure the meat. Curing is salting and drying so that the meat does not spoil. When I make jerky I like to do smaller batches at a time so that I can use different flavors.

After I grind the meat I mix in the spices. I then use my cookie press with the largest design to form logs to make jerky. The logs can be placed in a dehydrator or in a very low temperature oven. We have a dehydrator, but I often use the oven method if I make jerky in a larger quantity. If I do not have wild game trimmings I watch for sales on beef roasts. Most meat counters are willing to grind the roasts free of charge. The ground roasts work better to make jerky than hamburger because the meat is leaner. Once the jerky is dried I place it in small Ziploc bags for him to take with him.
